Change up your normal spaghetti dinner with this delicious Pasta Primavera.

We don't eat pasta that often, but when we do, it's always enjoyed. Instead of a traditional spaghetti, we made pasta primavera. Instead of having a thick red sauce, this pasta is covered with a creamy sauce and packed with bell peppers, onion, and sausage.
Tips
Make sure the sausage is completely cooked before taking it out of the pan
Give yourself plenty of time to make this dish! If you're like us, it always takes us longer than expected to make our dishes.
When prepping your sausage, leave the casings on, and cut them into thick coins (about 1 inch). This will help the sausage stay in coins better.
Thinly slice your bell peppers and onions to help them cook more easily.
Pasta Primavera

Serves: 6 Cuisine: Italian
Ingredients
1 package of sweet Italian Sausage(skins off and coined)
2 TBSP olive oil
2 onions, sliced
2 cups of sliced bell peppers (red, yellow, green)
2 TBSP minced garlic
1 cup of cherry tomatoes, sliced in half
2 TBSP flour
3/4 cup chicken stock
2-4 cups Spinach
Salt & pepper to taste
1/4 cup parsley chopped
Parmesan cheese
Pasta of your choice (We used Penne)
Directions
1. Heat the oil in a large saute pan over medium-high heat
2. Cook sausage until browned and cooked thoroughly. Remove from pan and set aside
3. In the same pan cook peppers and onions until they begin to soften, about 4 minutes. Add garlic and tomatoes, cook for an additional 2-3 minutes
4. Stir in flour and cook for 1 minute. Add chicken stock and sausage to the pan and bring to a simmer. Cook until liquid has thickened slightly, about 5 minutes.
5. Toss in spinach and stir. Let wilt for about 2 minutes.
6. Meanwhile, cook pasta according to package directions
7. Toss pasta with sausage mixture. Serve garnished with Parmesan and parsley.
