The Basic Quesadilla

I have always loved quesadillas for their crunchy outside and soft flavorful fillings. When I was about 8 years old I even named myself the Quesadilla Queen! But lets get things straight, quesadillas in the microwave are jut gross, in the oven is definitively better, but takes too long if you want a fast lunch, so making them on the stove is the way to go.
Tips for quesadilla success
1. Make sure you have all your ingredients out before you turn on the stove and start heating up the pan.
2. Warm-up any meat, beans, or pre-cooked vegetables before putting them into the pan.
3. Let the quesadilla sit for 2 to 3 minutes after cooking before you cut it, so all the cheese doesn't ooze out.
What You'll Need for the Base for a Quesadilla
Tortillas
Cheese ( we normally use Mexican Cheese, Mexican Melting Cheese, or Mozzarella - it depends on the filling!)

The Basic Quesadilla
For when you are in need of a quick, easy and very yummy lunch!

Ingredients
-2 large tortillas
-1/3 cup black beans
-1/2 cup cheese*(we use Mexican or Mexican Melting Cheese)
-2/3 cup cut bell pepper in inch sized pieces
-1/2 cup onion
Directions
1. Warm up the beans in the microwave for 3o seconds and in a pan over medium heat saute the bell pepper and onion. Once cooked set aside.
2. In the same pan over medium heat place one of the tortillas and then add half of your cheese.
3. Put the veggies and beans on the tortilla along with the remaining cheese and place the other tortilla on top.
4. Cook until golden brown and the flip over and cook the other side until golden brown, this usually takes about 3 minutes preside.
5. Let sit for a minute then cut and enjoy!
